Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- 500 g Urad Dal
- 200 g Dahi
- - Grated Coconut
- medium Chilli Green Long
- - Dry Red Chillies
- 100 g Curry Leaves
- 50 g Masala Sambhar
- 100 g Tamarind Paste
- 200 ml Mustard Oil
- 200 g Fenugreek Seeds
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Wash millet and urad dal thoroughly and soak them separately with fenugreek seeds for 6 hours or overnight.
- 2. Grind the soaked millet and urad dal into a smooth batter, adding yogurt and a little water for consistency. Mix in salt and let the batter ferment overnight in a warm place.
- 3. Grease idli molds and pour the fermented batter into them. Steam the idlis for 12-15 minutes until fluffy and cooked through.
- 4. For the chutney, blend grated coconut, green chili, and a pinch of salt with a splash of water to create a smooth paste. Temper with mustard seeds, dried red chilies, and curry leaves in hot oil.
- 5. Prepare the sambar by sautéing mixed vegetables in oil, adding turmeric powder, sambar powder, tamarind paste, and 500ml water. Simmer for 15-20 minutes until vegetables are tender and the flavors meld together.
- 6. Serve the millet idlis warm alongside the zesty coconut chutney and steaming hot sambar.
