Ingredients
- 250g Swad White Aval 250g
- - Coconut Oil
- 500 g Onion
- 500 g Tomato - Hybrid
- 200Ml Kara Coconut Milk Classic (200ml)
- 250 g Carrot
- 100 g Lemon
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- - Green Peas
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the flattened rice (poha) under cold water for a few seconds until softened, then drain and set aside.
- 2. Heat coconut oil in a pan over medium heat, add mustard seeds, and let them splutter. Add curry leaves and sauté for 30 seconds.
- 3. Add the chopped onion and sauté until translucent, about 2-3 minutes. Stir in the green chili, turmeric powder, red chili powder, and coriander powder, and cook for another minute.
- 4. Add the chopped tomato and cook until softened, about 3-4 minutes. Stir in the coconut milk and bring to a gentle simmer.
- 5. Add the green peas and grated carrot, and cook for 3-4 minutes until the vegetables are tender.
- 6. Gently fold in the softened poha and mix well to coat it evenly with the curry. Add salt to taste and cook for 2-3 minutes to allow the flavors to meld.
- 7. Turn off the heat, squeeze in the lime juice, and give it a final stir. Garnish with roasted peanuts and fresh cilantro before serving.
