Ingredients
- 100 g Quinoa
- 200 ml Ghee
- 100 g Jeera
- 100 g Yellow Mustard Seeds
- 500 g Capsicum Green
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Green Peas
- medium Chilli Green Long
- 100 g Lemon
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the quinoa thoroughly in cold water and set aside to drain.
- 2. Heat ghee in a tawa or large pan over medium heat. Add mustard seeds and cumin seeds, letting them splutter.
- 3. Add curry leaves and the slit green chili, sautéing for 30 seconds until aromatic.
- 4. Stir in the chopped onion and sauté until translucent, about 3-4 minutes.
- 5. Add the chopped tomato, turmeric powder, red chili powder, and garam masala. Cook until the tomatoes soften, around 3-4 minutes.
- 6. Mix in the chopped capsicum, carrot, and green peas. Sauté the vegetables for 5-6 minutes until slightly tender.
- 7. Add the rinsed quinoa and salt. Stir well to combine with the vegetables and spices.
- 8. Pour in enough water to just cover the quinoa and vegetables. Cover the pan and cook on low heat for 15-20 minutes or until the quinoa is tender and water is absorbed.
- 9. Turn off the heat, sprinkle with fresh coriander leaves, and drizzle with lemon juice. Gently fluff the upma with a fork.
- 10. Serve warm, garnished with additional coriander leaves if desired.
