  • 1 head Cauliflower
  • 250 g French Beans
  • 100G Oleo
  • 100 g Hing Khoda
  • 1 kg Bell Peppers
  • 500 g Tomato - Hybrid
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • - Green Peas
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash and prepare the vegetables: cut cauliflower into small florets, dice the bell peppers, chop the green beans, and set aside.
  2. 2. Heat 2 tablespoons of vegetable oil in a tawa or flat pan over medium heat. Add cumin seeds and let them splutter, then add hing (asafoetida) and stir for a few seconds.
  3. 3. Add diced tomatoes to the pan and cook until they soften and release oil, about 5-7 minutes, stirring occasionally.
  4. 4. Mix in turmeric powder, red chili powder, coriander powder, and a pinch of salt. Stir well to combine the spices with the tomatoes.
  5. 5. Add the prepared vegetables (cauliflower, green beans, bell peppers, and green peas) to the pan. Stir to coat them evenly with the masala mixture.
  6. 6. Cover the pan and let the vegetables cook on low-medium heat for 10-15 minutes, stirring occasionally, until they are tender but not mushy.
  7. 7. Once the vegetables are cooked, sprinkle garam masala and mix well. Cook for another 2 minutes to allow the flavors to meld.
