Ingredients
- 1 kg Idli Rice
- 500 g Urad Dal
- 200 g Fenugreek Seeds
- 500 g Toor Dal
- 250 g Carrot
- 500 gm Eggplant
- 250 g French Beans
- 500 g Onion
- 100 g Tamarind Paste
- 50 g Masala Sambhar
- 100 g Curry Leaves
- - Dry Red Chillies
- 100G Oleo
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Wash and soak the idli rice, urad dal, and fenugreek seeds separately for 4-6 hours. Grind them into a smooth batter, mix well, and let it ferment overnight.
- 2. In a pressure cooker, wash and cook the toor dal with 1/2 tsp turmeric powder until soft. Mash it well and set aside.
- 3. Heat 1 tbsp oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, dried red chilies, and sliced onions. Sauté until onions are soft.
- 4. Add diced carrots, brinjal, and green beans to the pan. Stir-fry for 2-3 minutes, then add chopped tomatoes and cook until softened.
- 5. Add tamarind pulp, sambar powder, and salt to the vegetables. Mix well and cook for 2-3 minutes until fragrant.
- 6. Add the mashed dal to the pan, mix thoroughly, and simmer for 10 minutes. Adjust consistency with water if needed.
- 7. Grease idli plates, pour the fermented batter into the molds, and steam for 10-12 minutes until idlis are fluffy and cooked through.
- 8. Serve the hot idlis with the prepared sambar on the side. Garnish the sambar with fresh coriander leaves, if desired.
