Wholesome Punjabi Paneer Kathi Roll is a delightful breakfast dish that combines soft whole wheat parathas with a flavorful, protein-packed paneer filling spiced to medium perfection. Ingredients
- 200 g Paneer
- 500 g Onion
- 500 g Capsicum Green
- 500 g Tomato - Hybrid
- 200 g Dahi
- 1Bunch Pudina
- 100 g Coriander Leaves
- 200G Adrak Lasun Paste (200g)
- 200 ml Mustard Oil
- - Coriander Powder
- 100 g Jeera Powder
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. In a bowl, marinate the paneer cubes with ginger-garlic paste, turmeric powder, cumin powder, coriander powder, red chili powder, lemon juice, and a pinch of salt. Let it sit for 15 minutes.
- 2. Heat 1 tbsp oil in a pan over medium heat. Add the marinated paneer cubes and sauté for 3-4 minutes until lightly browned. Remove and set aside.
- 3. In the same pan, add the remaining 1 tbsp oil and sauté the onions and bell peppers until softened, about 5 minutes. Add the chopped tomatoes and cook for another 3-4 minutes until the mixture is well combined and slightly thickened.
- 4. Add the sautéed paneer back to the pan, mix well, and cook for 2-3 minutes to allow the flavors to meld. Adjust salt as needed.
- 5. In a small bowl, mix yogurt with mint leaves, coriander leaves, and a pinch of salt to prepare the mint yogurt chutney.
- 6. Warm the whole wheat parathas or chapatis on a hot skillet for 1-2 minutes on each side. Spread a thin layer of the mint yogurt chutney on each paratha.
- 7. Place a portion of the paneer filling in the center of each paratha, then roll them up tightly. Optionally, secure the rolls with toothpicks for easier handling.
- 8. Serve the paneer kathi rolls warm with extra mint yogurt chutney on the side.
