Ingredients

  • 200 g Paneer
  • 500 g Onion
  • 500 g Capsicum Green
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 1Bunch Pudina
  • 100 g Coriander Leaves
  • 200G Adrak Lasun Paste (200g)
  • 200 ml Mustard Oil
  • - Coriander Powder
  • 100 g Jeera Powder
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a bowl, marinate the paneer cubes with ginger-garlic paste, turmeric powder, cumin powder, coriander powder, red chili powder, lemon juice, and a pinch of salt. Let it sit for 15 minutes.
  2. 2. Heat 1 tbsp oil in a pan over medium heat. Add the marinated paneer cubes and sauté for 3-4 minutes until lightly browned. Remove and set aside.
  3. 3. In the same pan, add the remaining 1 tbsp oil and sauté the onions and bell peppers until softened, about 5 minutes. Add the chopped tomatoes and cook for another 3-4 minutes until the mixture is well combined and slightly thickened.
  4. 4. Add the sautéed paneer back to the pan, mix well, and cook for 2-3 minutes to allow the flavors to meld. Adjust salt as needed.
  5. 5. In a small bowl, mix yogurt with mint leaves, coriander leaves, and a pinch of salt to prepare the mint yogurt chutney.
  6. 6. Warm the whole wheat parathas or chapatis on a hot skillet for 1-2 minutes on each side. Spread a thin layer of the mint yogurt chutney on each paratha.
  7. 7. Place a portion of the paneer filling in the center of each paratha, then roll them up tightly. Optionally, secure the rolls with toothpicks for easier handling.
  8. 8. Serve the paneer kathi rolls warm with extra mint yogurt chutney on the side.
