- 100 g Coriander Leaves
- 250 G Masur Dal
- 250 g Spinach
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- 100 g Jeera
- 20 g Turmeric Powder
- - Coriander Powder
- 100 g Red Chili Powder
- 50 g Asafoetida Powder
- 100 g Salt
- 1 liter Sunflower Oil
Instructions
- 1. Rinse the red lentils thoroughly under running water until the water runs clear, then set them aside.
- 2. Heat the cooking oil in a large pot over medium heat. Add the cumin seeds and asafoetida, and sauté for 30 seconds until aromatic.
- 3. Stir in the chopped green chili and tomatoes. Cook for 5-7 minutes, stirring occasionally, until the tomatoes become soft and form a sauce.
- 4. Add the turmeric powder, ground coriander, and red chili powder to the pot, and cook for 1 minute to bloom the spices.
- 5. Add the rinsed lentils to the pot along with 3 cups of water. Stir well and bring the mixture to a boil.
- 6. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, stirring occasionally, until the lentils are tender and have absorbed most of the liquid.
- 7. Stir in the chopped spinach. Cook for an additional 5 minutes until the spinach wilts and the stew is ready.
- 8. Season with salt to taste and adjust the consistency with more water if needed. Simmer for 2-3 minutes to combine the flavors.
- 9. Remove the pot from heat and garnish with fresh coriander leaves before serving.
