Ingredients
- 250g Swad White Aval 250g
- 500 g Onion
- 500 g Tomato - Hybrid
- 1 liter Sunflower Oil
- 250 g Carrot
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- - Green Peas
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the flattened rice (poha) in a colander under running water for 1-2 minutes until soft, then drain and set aside.
- 2. Heat oil in a kadhai or deep pan over medium heat. Add mustard seeds and let them splutter, then add cumin seeds and curry leaves.
- 3. Sauté the chopped onion and green chili until the onion turns translucent, about 2-3 minutes.
- 4. Add the chopped tomato, grated carrot, and green peas. Cook for 3-4 minutes until the vegetables are tender.
- 5. Stir in the turmeric powder, red chili powder, and salt. Mix well to coat the vegetables evenly with the spices.
- 6. Gently fold in the softened poha and roasted peanuts. Cook for another 2-3 minutes, stirring occasionally to combine all ingredients.
- 7. Turn off the heat, add lemon juice, and mix well. Garnish with fresh coriander leaves before serving.
- 8. Serve hot as a wholesome breakfast or light meal, accompanied by a cup of tea or coffee.
