Ingredients
- 1 Kg Idly/Dosa Batter
- 1Kg Potato
- 500 g Onion
- 100 g Curry Leaves
- 200 ml Mustard Oil
- - Grated Coconut
- 200 g Roasted Chana Dal
- 100 g Coriander Leaves
- medium Chilli Green Long
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
- 100 g Tamarind Paste
Instructions
- 1. Heat 1 tbsp oil in a pan and add mustard seeds. Once they splutter, add curry leaves, chopped onion, and green chili. Sauté until onions are translucent.
- 2. Add turmeric powder, red chili powder, and mashed potatoes to the pan. Mix well, cook for 2-3 minutes, then add salt and lemon juice. Stir and set aside to cool.
- 3. Blend grated coconut, tamarind, roasted chana dal, salt, and 2 tbsp water to make a smooth chutney. Add chopped coriander leaves and mix.
- 4. Heat a non-stick pan and pour a ladle of wholegrain dosa batter. Spread evenly into a thin round. Cook until lightly crisp on one side, then flip and cook for another minute.
- 5. Place 2-3 tbsp of the potato masala on the cooked dosa, roll tightly into a wrap, and repeat for remaining batter and filling.
- 6. Serve the dosa wraps warm with coconut chutney on the side.
