Ingredients

  • 250 g Spinach
  • 200 ml Mustard Oil
  • 100 g Hing Khoda
  • - Fresh Cream
  • 100 g Coriander Leaves
  • 250 G Chavali Dal
  • - Coriander Powder
  • 100 g Jeera
  • 1 Kg Kissan Tomato Puree
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 250 ml Lemon Juice Concentrate

Instructions

  1. 1. Drain the soaked white beans and set aside. Boil them in a pot until tender, approximately 30-35 minutes. Set aside.
  2. 2. Heat oil in a deep pan over medium heat. Add cumin seeds and let them splutter. Add hing (asafoetida) and stir for a few seconds.
  3. 3. Add the tomato puree and cook for 5-7 minutes until the oil separates. Stir in turmeric powder, coriander powder, and red chili powder.
  4. 4. Add the boiled white beans to the pan and mix well. Cook for 10 minutes, stirring occasionally to let the flavors meld.
  5. 5. Add chopped spinach to the pan and cook for another 5-7 minutes until the spinach wilts and blends into the stew.
  6. 6. Stir in salt and fresh cream (optional) for added richness. Let simmer for 2-3 minutes.
  7. 7. Turn off the heat and add lemon juice. Mix well. Garnish with chopped coriander leaves.
