- 1. Gather all ingredients: 2 large Vidalia onions (thinly sliced), 2 tablespoons butter, 1 tablespoon olive oil, 2 cloves garlic (minced), 1 teaspoon fresh thyme (chopped), 1 bay leaf, 1/4 cup dry white wine (optional), 4 cups chicken stock, 1/2 cup heavy cream, 1/2 cup cooked shredded chicken, salt and pepper to taste, and 2-3 slices of baguette (toasted) for serving.
