Ingredients
- 100 g Sambar Onion Peeled
- 500 g X 2 Organically Grown Potato Combo
- 200 g Fortune Soya Chunks
- 100 g Baby Spinach
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 250 g Vistevia Sugar Free Tomato Sauce
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a skillet over medium heat, cook the soya chunks and diced onion until the onion is softened and the soya chunks are heated through, about 5-7 minutes. Remove from heat.
- 3. Thinly slice the potatoes and arrange a single layer at the bottom of a 4-quart baking dish.
- 4. Sprinkle a portion of the soya chunk mixture over the potatoes, then add a third of the spinach, corn, and tomato sauce (including its liquids). Season with salt and pepper.
- 5. Repeat the layering process two more times, finishing with a final layer of potatoes on top.
- 6. If the liquid from the vegetables does not reach the top layer, add a small amount of water to ensure even cooking.
- 7. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is lightly browned.
- 8. Let the dish rest for 5 minutes before serving. Enjoy your vegetarian layered bake!
