Ingredients
- 500 ml Bertolli Extra Virgin Olive Oil
- 100 g Sambar Onion Peeled
- 50 g X 3 Milagro Farm Smoked Paprika Combo
- 400 g Pastazara Finely Chopped Tomatoes
- 500 G Preserved Dried Salted Black Beans
- 80 g Knorr Vegetables Stock Cubes
- 500 G Kinwaaquinoa
- 100 g Jk Jeera Powder / Cumin Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 500 g Tomato - Hybrid
Instructions
- 1. Heat a large pot over medium heat and add 2 tbsp olive oil.
- 2. Add 1 diced onion and sauté until translucent, about 5 minutes.
- 3. Stir in 1 tsp ground cumin and 1 tsp smoked paprika, cooking for 1 minute to release the aromas.
- 4. Add 2 chopped fresh tomatoes and cook until softened, about 5 minutes.
- 5. Stir in 2 cans of beans (drained and rinsed) and 1 cup of vegetable stock. Bring to a boil, then reduce heat to a simmer.
- 6. Add 1 tsp salt and 1 tsp black pepper, stirring well. Simmer for 30 minutes, stirring occasionally.
- 7. Serve the stew over cooked quinoa for a complete and satisfying meal.
