- 500 g Onion
- - Bell Peppers
- - Cayenne Pepper
- - Thyme Leaves
- 1 kg Sweet Potato
- 500 g Black Beans
- 250 ml Coconut Milk
- 200 g Table Salt
- 30 g Smoked Paprika Powder
- 500 Ml Champion Oil
Instructions
- 1. Heat 2 tbsp of oil in a large skillet over medium heat.
- 2. Add 1 finely chopped onion, 2 minced garlic cloves, and 1 chopped bell pepper. Sauté for 5 minutes until softened.
- 3. Stir in 1 tsp of ground allspice, 1 tsp of thyme, 1/2 tsp of smoked paprika, and a pinch of cayenne pepper. Cook for 1 minute to release the aromas.
- 4. Add 1 cup of rinsed and drained black beans, 1 cup of diced sweet potato, and 1/2 cup of chopped tomatoes. Mix well.
- 5. Pour in 1 cup of coconut milk and 1/2 cup of vegetable broth. Bring to a gentle simmer.
- 6. Cover and cook for 15-20 minutes until the sweet potato is tender.
- 7. Stir in 1 cup of cooked rice and 1/2 cup of chopped fresh cilantro. Season with salt and pepper to taste.
