Ingredients

  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 100G Oleo
  • 100 g Dalchini (Cassia )
  • 200G Adrak Lasun Paste (200g)
  • 50g Everest Garam Masala
  • 100 g Green Elaichi
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
  2. 2. Heat vegetable oil in a deep pan or pot over medium heat. Add cumin seeds, bay leaf, cinnamon stick, and cardamom pods, and sauté for 30 seconds until fragrant.
  3. 3. Add the sliced onion and sauté until golden brown. Stir in the ginger-garlic paste and cook for another minute.
  4. 4. Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomato softens and the mixture becomes a thick masala.
  5. 5. Mix in the diced vegetables and cook for 2-3 minutes. Add the yogurt and stir well to combine.
  6. 6. Add the drained rice to the pan and gently mix to coat the grains with the masala. Pour in 2 cups of hot water and bring to a boil.
  7. 7. Reduce the heat to low, cover the pan with a lid, and let the rice cook for 15-20 minutes, or until the water is fully absorbed and the rice is tender.
  8. 8. Once cooked, sprinkle garam masala over the pilaf, fluff the rice gently with a fork, and let it rest for 5 minutes before serving.
