Ingredients
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 g Dahi
- 100G Oleo
- 100 g Dalchini (Cassia )
- 200G Adrak Lasun Paste (200g)
- 50g Everest Garam Masala
- 100 g Green Elaichi
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
Instructions
- 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
- 2. Heat vegetable oil in a deep pan or pot over medium heat. Add cumin seeds, bay leaf, cinnamon stick, and cardamom pods, and sauté for 30 seconds until fragrant.
- 3. Add the sliced onion and sauté until golden brown. Stir in the ginger-garlic paste and cook for another minute.
- 4. Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomato softens and the mixture becomes a thick masala.
- 5. Mix in the diced vegetables and cook for 2-3 minutes. Add the yogurt and stir well to combine.
- 6. Add the drained rice to the pan and gently mix to coat the grains with the masala. Pour in 2 cups of hot water and bring to a boil.
- 7. Reduce the heat to low, cover the pan with a lid, and let the rice cook for 15-20 minutes, or until the water is fully absorbed and the rice is tender.
- 8. Once cooked, sprinkle garam masala over the pilaf, fluff the rice gently with a fork, and let it rest for 5 minutes before serving.
- 9. Serve the Vegetable Masala Pilaf warm with a side of yogurt or raita for a complete meal.
