- 500 g Onion
- 250 g Carrot
- - Bell Peppers
- - Green Peas
- 500 g Wheat Flour / Maida
- 50 g Cumin Powder
- 125G Curry Powder
- 5G Turmeric Powder
Instructions
- 1. Preheat the oven to 200°C (400°F).
- 2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and 1/2 cup of cold unsalted butter. Mix until the mixture resembles coarse crumbs.
- 3. Gradually add 1/4 cup of ice water, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- 4. While the dough is chilling, heat 1 tbsp of vegetable oil in a pan over medium heat. Add 1/2 cup of finely chopped onion and sauté until translucent.
- 5. Add 1/2 cup of finely chopped carrots, 1/2 cup of finely chopped bell peppers, and 1/2 cup of cooked green peas to the pan. Cook for 5 minutes, stirring occasionally.
- 6. Stir in 1 tsp of curry powder, 1/2 tsp of turmeric, 1/2 tsp of cumin, and 1/2 tsp of thyme. Cook for another 2 minutes, then remove from heat and let the filling cool.
- 7. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out circles using a 6-inch round cutter.
- 8. Place a spoonful of the vegetable filling onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape. Press the edges to seal, then crimp with a fork.
- 9. Place the patties on a baking sheet lined with parchment paper. Brush the tops with 1 beaten egg for a golden finish.
- 10. Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown. Let cool slightly before serving.
