Ingredients
- 100 g Coriander Leaves
- 100 g Garlic
- 100 g Lemon Grass
- loose Ginger
- 200 ml Coconut Milk
- 1 pack Mushrooms Button
- 1 pc Broccoli
- 2 pcs Zucchini
- 200 g Organic Tofu - Soy Paneer
- 2 pcs Sweet Corn
- 500 g Capsicum Green
- 50G Real Thai Canned Red Curry Paste (50g)
- 1 l Refined Soyabean Oil
- 80 g Soya Sauce
- 200 g Table Salt
- 500 g Sugar
Instructions
- 1. In a large pan, heat some Sunny Soya Fit Refined Soyabean Oil over medium heat.
- 2. Add 2 cloves of minced garlic and 1 tablespoon of minced organic ginger to the pan. Sauté until fragrant.
- 3. Add sliced mushrooms, diced broccoli, and chopped zucchini to the pan. Stir-fry for about 5 minutes.
- 4. Add sliced hydroponically grown bell peppers, green capsicum, and sweet corn kernels. Cook for another 5 minutes until the vegetables start to soften.
- 5. Stir in 200g of cubed Mooz Organic Tofu and cook for an additional 2 minutes.
- 6. Add 250 ml of Dabur Hommade Lemoneez, 3 tablespoons of Nilons Soya Sauce, and dabur hommade coconut milk. Stir to combine well.
- 7. Add chopped lemongrass and salt to taste along with 1 teaspoon of Madhur Sugar to balance out the flavors.
- 8. Allow the curry to simmer for 10-15 minutes, stirring occasionally, until all the vegetables are tender and the flavors are well incorporated.
- 9. Garnish with fresh coriander leaves and serve hot with steamed rice or your choice of accompaniment.
