Ingredients

  • 100 g Coriander Leaves
  • 100 g Garlic
  • 100 g Lemon Grass
  • loose Ginger
  • 200 ml Coconut Milk
  • 1 pack Mushrooms Button
  • 1 pc Broccoli
  • 2 pcs Zucchini
  • 200 g Organic Tofu - Soy Paneer
  • 2 pcs Sweet Corn
  • 500 g Capsicum Green
  • 50G Real Thai Canned Red Curry Paste (50g)
  • 1 l Refined Soyabean Oil
  • 80 g Soya Sauce
  • 200 g Table Salt
  • 500 g Sugar

Instructions

  1. 1. In a large pan, heat some Sunny Soya Fit Refined Soyabean Oil over medium heat.
  2. 2. Add 2 cloves of minced garlic and 1 tablespoon of minced organic ginger to the pan. Sauté until fragrant.
  3. 3. Add sliced mushrooms, diced broccoli, and chopped zucchini to the pan. Stir-fry for about 5 minutes.
  4. 4. Add sliced hydroponically grown bell peppers, green capsicum, and sweet corn kernels. Cook for another 5 minutes until the vegetables start to soften.
  5. 5. Stir in 200g of cubed Mooz Organic Tofu and cook for an additional 2 minutes.
  6. 6. Add 250 ml of Dabur Hommade Lemoneez, 3 tablespoons of Nilons Soya Sauce, and dabur hommade coconut milk. Stir to combine well.
  7. 7. Add chopped lemongrass and salt to taste along with 1 teaspoon of Madhur Sugar to balance out the flavors.
  8. 8. Allow the curry to simmer for 10-15 minutes, stirring occasionally, until all the vegetables are tender and the flavors are well incorporated.
  9. 9. Garnish with fresh coriander leaves and serve hot with steamed rice or your choice of accompaniment.
