Ingredients

  • 100 g Coriander Leaves
  • 200 ml Coconut Milk
  • 500 g Onion
  • 1 pack Mushrooms Button
  • - Bell Peppers
  • 1 pc Broccoli
  • medium Chilli Green Long
  • - Peppercorn
  • 100 g Lemon Grass
  • 100 g Garlic
  • loose Ginger
  • 200 g Table Salt
  • 190 ml White Cooking Vinegar
  • 100 g Cornflour
  • 500 Ml Champion Oil

Instructions

  1. 1. Prepare your ingredients: dice bell peppers, chop broccoli, slice mushrooms, and thinly slice onion. Mince garlic, ginger, and green chili.
  2. 2. In a blender, add coriander leaves, garlic, ginger, green chili, lemongrass, peppercorn, and blend until smooth to make the green curry paste.
  3. 3. Heat a tablespoon of cooking oil in a large pan over medium heat. Add the onion and sauté until translucent.
  4. 4. Add the prepared green curry paste to the pan and cook for 2-3 minutes until fragrant.
  5. 5. Pour in the coconut milk and white cooking vinegar, stirring to combine well.
  6. 6. Add the diced bell peppers, broccoli, mushrooms, sweet corn, and a pinch of salt to the pan. Stir and let it simmer until the vegetables are tender.
  7. 7. Mix a tablespoon of cornflour with a little water to make a slurry, then add it to the curry to thicken the sauce.
  8. 8. Adjust the seasoning with salt and pepper to taste. Cook for another minute.
