- 500 g Tomato - Hybrid
- 500 g Capsicum Green
- 250 g Spinach

- 1. Preheat the oven to 180°C (350°F) and lightly grease a medium-sized ovenproof skillet with olive oil.
- 2. Heat 1 tablespoon of olive oil in the skillet over medium heat. Remove the casing from the sausages, crumble them into small pieces, and cook for 5-7 minutes until browned and cooked through.
- 3. Add diced tomatoes, green bell pepper, and spinach to the skillet and sauté for 3-4 minutes until the vegetables soften slightly.
- 4. In a bowl, whisk together the eggs, Parmesan cheese, oregano, chili flakes, black pepper, and salt until fully combined.
