- 500 g Capsicum Green
- 2 pcs Zucchini

- 60G Primi Piatti Red Chilli Flakes
- 250 g Spinach
- 250 ml Lemon Juice Concentrate
- 100 g Sunflower Seeds Plain
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 100 g Hing Khoda
- 50 g Black Pepper Powder
- 100 g Salt
Instructions
- 1. Heat olive oil in a large pan over medium heat. Add hing (asafoetida) and let it sizzle for 10 seconds to release its aroma.
- 2. Add diced tomatoes, bell peppers, and zucchini to the pan. Stir well and cook for 5-7 minutes until the vegetables soften.
- 3. Add boiled chickpeas to the pan, followed by dried oregano, dried basil, black pepper powder, red chili flakes, and salt. Stir to combine and cook for another 5 minutes.
- 4. Add fresh spinach leaves to the pan and stir gently until they wilt, which should take about 2-3 minutes.
- 5. Remove the pan from heat and drizzle lemon juice over the mixture. Sprinkle chopped parsley and sunflower seeds (if using) for added freshness and crunch.
