Ingredients

  • 100 g Quinoa
  • 200 ml Ghee
  • 500 g Onion
  • 100 g Lemon
  • 100 g Coriander Leaves
  • 250 g Carrot
  • medium Chilli Green Long
  • - Coriander Powder
  • 50 g Cumin Powder
  • 100 g Curry Leaves
  • - Green Peas
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse quinoa thoroughly under running water and set aside. Heat a tawa or flat griddle on medium heat and dry roast the quinoa for 3-4 minutes until aromatic. Remove and set aside.
  2. 2. Heat ghee on the tawa and add mustard seeds. Once they splutter, add curry leaves and green chili, sautéing for 30 seconds.
  3. 3. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Stir in the green peas and diced carrot, cooking for another 5 minutes.
  4. 4. Mix in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt, cooking for 1 minute to blend the spices.
  5. 5. Add the roasted quinoa to the tawa along with 2 cups of water. Stir well, cover, and cook on low heat for 15 minutes, or until the quinoa is fluffy and water is absorbed.
  6. 6. Turn off the heat, drizzle lemon juice over the upma, and garnish with fresh coriander. Serve warm.
