Ingredients
- 100 g Quinoa
- 200 ml Ghee
- 500 g Onion
- 100 g Lemon
- 100 g Coriander Leaves
- 250 g Carrot
- medium Chilli Green Long
- - Coriander Powder
- 50 g Cumin Powder
- 100 g Curry Leaves
- - Green Peas
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse quinoa thoroughly under running water and set aside. Heat a tawa or flat griddle on medium heat and dry roast the quinoa for 3-4 minutes until aromatic. Remove and set aside.
- 2. Heat ghee on the tawa and add mustard seeds. Once they splutter, add curry leaves and green chili, sautéing for 30 seconds.
- 3. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Stir in the green peas and diced carrot, cooking for another 5 minutes.
- 4. Mix in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt, cooking for 1 minute to blend the spices.
- 5. Add the roasted quinoa to the tawa along with 2 cups of water. Stir well, cover, and cook on low heat for 15 minutes, or until the quinoa is fluffy and water is absorbed.
- 6. Turn off the heat, drizzle lemon juice over the upma, and garnish with fresh coriander. Serve warm.
