- 500 g Onion
- 6 pcs White Eggs
- 1 pack Mushrooms Button
- - Toned Milk
- - Parmesan Cheese Grated
- 100 g Unsalted Butter
Instructions
- 1. In a large bowl, combine the flour and salt. Add the cold butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes. Preheat your oven to 375°F.
- 2. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Press the dough into the dish and trim any excess. Prick the bottom with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for another 5 minutes until lightly golden. Set aside.
- 3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5–7 minutes. Add sliced mushrooms and cook until browned and any moisture has evaporated. Season with salt and pepper.
- 4. In a large bowl, whisk together the eggs, heavy cream, milk, grated Parmesan, and half of the shredded Gruyère cheese.
- 5. Spread the mushroom mixture evenly over the baked crust. Pour the egg and cream mixture over the mushrooms. Sprinkle the remaining Gruyère cheese evenly on top.
- 6. Bake the quiche in the preheated oven for 35–40 minutes, or until the filling is set and the top is golden brown. Let the quiche cool for a few minutes before slicing. Garnish with fresh parsley or chives if desired.
