  • 100 g Hing Khoda
  • 250 g French Beans
  • - Green Peas
  • 100 g Tej Patta
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 20 g Cinnamon
  • - Coriander Powder
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Meanwhile, chop the tomatoes, green beans, and cabbage, and set aside.
  2. 2. Heat vegetable oil in a large pot over medium heat. Add cumin seeds, cinnamon stick, bay leaves, and hing, and sauté for 30 seconds until aromatic. Stir in the chopped tomatoes, turmeric powder, coriander powder, and red chili powder, and cook for 3-4 minutes until the tomatoes soften.
  3. 3. Add the green beans, green peas, cabbage, and salt to the pot. Mix well and cook for 5 minutes. Drain the soaked rice and add it to the pot, stirring gently to combine. Pour in enough water to cover the rice and vegetables, bring to a boil, then reduce the heat to low, cover, and cook for 15-20 minutes until the rice is tender and fluffy.
  4. 4. Remove from heat and let the Kabsa rest for 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro leaves, and serve hot with yogurt or a side salad.
