Ingredients

  • 100 g Coriander Leaves
  • 200 ml Fish Sauce
  • 50 g Red Curry Paste
  • 200 ml Coconut Milk
  • 250 g Jasmine Rice
  • - Chicken Breast
  • 500 g Sugar
  • 500 Ml Champion Oil

Instructions

  1. 1. Rinse 1 cup of jasmine rice under cold water until the water runs clear. Cook it according to package instructions, using 1 1/2 cups of water. Set aside and keep warm.
  2. 2. Heat 1 tbsp of vegetable oil in a large skillet or wok over medium heat. Add 300g of boneless, skinless chicken breast, cut into bite-sized pieces, and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. 3. In the same skillet, add another 1 tbsp of vegetable oil. Add 2 tbsp of Thai red curry paste and sauté for 1-2 minutes until fragrant.
  4. 4. Pour in 1 can (400ml) of coconut milk, stirring well to combine with the curry paste. Bring to a gentle simmer.
  5. 5. Add 1 cup of mixed vegetables (such as bell peppers, zucchini, and snap peas) and cook for 5 minutes until the vegetables are tender but still crisp.
  6. 6. Return the cooked chicken to the skillet. Add 1 tbsp of fish sauce, 1 tsp of sugar, and the juice of half a lime. Stir well and simmer for another 2-3 minutes.
  7. 7. Garnish with 2 tbsp of freshly chopped cilantro and 1-2 sliced red chilies (optional for heat). Serve the curry hot over the cooked jasmine rice.
