Ingredients

  • 100 g Lemon
  • 50 g Cumin Powder
  • - Cheddar Cheese Powder 100g
  • 100 g Salt
  • 1 kg Basmati Rice
  • 1 liter Sunflower Oil
  • 450 G Sarwar Corn Kernels Indian
  • 1 kg Bell Peppers
  • - Red Chilli Powder
  • - Fresh Cream
  • 10 pcs Prawns
  • 100 g Garlic
  • 52 g Paprika Powder
  • 50 g Black Pepper Powder

Instructions

  1. 1. Rinse the basmati rice thoroughly and cook it according to the package instructions. Once cooked, set aside to cool slightly.
  2. 2. In a bowl, marinate the prawns with 1/2 tsp paprika, 1/2 tsp cumin powder, 1/2 tsp chili powder, 1/2 tsp salt, and black pepper. Let it sit for 10 minutes.
  3. 3. Heat 1 tbsp of vegetable oil in a large pan over medium heat. Add the marinated prawns and cook for 2-3 minutes on each side until they turn pink and are fully cooked. Remove from the pan and set aside.
  4. 4. In the same pan, add another 1 tbsp of vegetable oil. Sauté the minced garlic for 1 minute until fragrant, then add the diced bell peppers and corn. Cook for 3-4 minutes until the vegetables are tender but still crisp.
  5. 5. Reduce the heat to low and add the cooked rice to the pan with the vegetables. Stir in the heavy cream, grated cheddar cheese, and the remaining paprika, cumin powder, and chili powder. Mix well until the cheese melts and the rice is creamy and evenly coated.
  6. 6. Serve the queso rice in bowls, topped with the cooked prawns. Garnish with lime wedges for an added zing before serving.
