Ingredients

  • 1 kg Bell Peppers
  • 450 G Sarwar Corn Kernels Indian
  • 200 ml Mustard Oil
  • 500 g Capsicum Green
  • 30 g Smoked Paprika Powder
  • 50 g Black Pepper Powder
  • - Red Chilli Powder
  • - Dairy Milk
  • 100 g Salt
  • 100 g Jeera Powder
  • 20 g Turmeric Powder
  • - Chicken Breast
  • 1 kg Basmati Rice
  • - Cheese Block-200Gm

Instructions

  1. 1. Rinse the basmati rice thoroughly and cook it according to the package instructions. Once cooked, fluff it with a fork and set aside.
  2. 2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Season the chicken thighs with smoked paprika, cumin powder, turmeric powder, red chili powder, salt, and black pepper. Cook the chicken for 6-8 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest for 5 minutes before slicing into strips.
  3. 3. In the same skillet, add the remaining 1 tablespoon of oil and sauté the diced green and red bell peppers for 3-4 minutes until slightly softened. Add the sweet corn kernels and cook for an additional 2 minutes. Set the vegetables aside.
  4. 4. In a small saucepan, heat the milk over low heat and gradually add the queso cheese, stirring continuously until it melts into a smooth sauce. Remove from heat.
  5. 5. To assemble, divide the cooked rice into bowls. Top with sliced chicken, sautéed bell peppers, and corn. Drizzle the queso sauce generously over the top.
