- 100 g Cornflour
- 500 g Sugar
- 100 g Salt
- 20 g Cardamom Powder

- 1. In a mixing bowl, combine the Agar-Agar with 100ml of tender coconut water and stir well until it forms a smooth slurry.
- 2. In a saucepan, pour the remaining tender coconut water. Add sugar and a pinch of salt. Heat on medium flame, stirring occasionally, until the mixture is warm but not boiling.
- 3. Gradually add the Agar-agar slurry to the saucepan, stirring continuously to avoid lumps. Lastly add in the tender coconut flesh. Cook the mixture on low-medium heat for 8-10 minutes, stirring constantly, until it thickens to a pudding-like consistency.
- 4. Once thickened, remove the pudding from heat and let it cool for a few minutes. Pour the mixture into serving bowls or molds.
- 5. Allow the pudding to cool to room temperature, then refrigerate for at least 1-2 hours to set completely.
