- 1 kg Yellow Moong Dal
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- 300 g Ginger Paste
- 250 ml Olive Oil
- 500 g Capsicum Green
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 50G Green Chilies
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash the moong dal thoroughly and soak it for 30 minutes. Drain the water before cooking.
- 2. Cook the moong dal in a pot with enough water and a pinch of turmeric until soft but not mushy. Set aside.
- 3. Heat olive oil on a tawa or a flat pan over medium heat. Add cumin seeds and let them crackle.
- 4. Add the chopped onions and sauté until golden brown. Stir in the ginger paste and cook for 1-2 minutes.
- 5. Add the chopped tomatoes, green chilies, and a pinch of salt. Cook until the tomatoes are soft and the oil starts to separate.
- 6. Mix in the turmeric powder, red chili powder, and coriander powder. Cook for another 2 minutes to ensure the spices are well blended.
- 7. Add the capsicum and carrot, and sauté for 3-4 minutes until they are slightly tender but still crunchy.
- 8. Reduce the heat and add the cooked moong dal to the pan. Stir well to combine, and adjust the salt as needed.
- 9. Sprinkle garam masala and fresh coriander leaves on top. Mix gently and cook for another 2 minutes.
- 10. Serve hot directly from the tawa for a fresh and comforting breakfast.
