Ingredients
- 200 g Paneer
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 ml Ghee
- 100 g Lemon
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 1 kg Yellow Moong Dal
Instructions
- 1. Rinse the basmati rice and moong dal thoroughly and soak them together for 20 minutes.
- 2. Heat 1 tbsp ghee in a pressure cooker, add cumin seeds, and let them splutter. Add chopped onion and green chili, sauté until golden.
- 3. Add turmeric powder, coriander powder, and red chili powder. Stir well, then add the tomatoes and cook until softened.
- 4. Drain the soaked rice and dal, add them to the cooker, and mix well with the spices. Add 3 cups of water, salt, and cook for 3-4 whistles or until soft.
- 5. In a separate pan, heat the remaining ghee, add the paneer cubes, and sauté until golden brown on all sides. Sprinkle with garam masala and set aside.
- 6. Once the pressure releases, open the cooker and gently mix the khichdi. Add lemon juice and adjust seasoning as needed.
- 7. Serve the khichdi in bowls, topped with the sautéed paneer and garnished with fresh coriander leaves.
