Ingredients

  • 1 Kg Idly/Dosa Batter
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 250 g Carrot
  • medium Chilli Green Long
  • 200 ml Mustard Oil
  • 500 g Capsicum Green
  • 50 g Black Pepper Powder
  • 100 g Coriander Leaves
  • 50 g Cumin Powder
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Prepare all the vegetables by finely chopping onions, tomatoes, capsicum, green chilies, coriander leaves, and grating the carrot.
  2. 2. In a mixing bowl, combine the chopped vegetables (onions, tomatoes, capsicum, carrot, coriander leaves, and green chilies) with cumin powder, red chili powder, turmeric powder, black pepper powder, and a pinch of salt. Mix well.
  3. 3. Heat a tawa or non-stick pan over medium heat and lightly grease it with oil.
  4. 4. Pour a ladleful of dosa batter onto the tawa and spread it into a thick round shape, about 1/3 inch thick.
  5. 5. Immediately sprinkle the prepared vegetable mixture evenly over the surface of the batter, pressing gently so the vegetables stick.
  6. 6. Drizzle a few drops of oil around the edges and cook on medium heat for 2-3 minutes or until the bottom turns golden brown.
  7. 7. Flip the uttapam carefully using a spatula and cook the other side for 1-2 minutes until the vegetables are slightly charred and the uttapam is cooked through.
  8. 8. Remove from heat and repeat the process with the remaining batter and vegetable mixture.
  9. 9. Serve hot with coconut chutney or tomato chutney on the side for a complete breakfast.
