Ingredients
- 1 Kg Idly/Dosa Batter
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- medium Chilli Green Long
- 200 ml Mustard Oil
- 500 g Capsicum Green
- 50 g Black Pepper Powder
- 100 g Coriander Leaves
- 50 g Cumin Powder
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Prepare all the vegetables by finely chopping onions, tomatoes, capsicum, green chilies, coriander leaves, and grating the carrot.
- 2. In a mixing bowl, combine the chopped vegetables (onions, tomatoes, capsicum, carrot, coriander leaves, and green chilies) with cumin powder, red chili powder, turmeric powder, black pepper powder, and a pinch of salt. Mix well.
- 3. Heat a tawa or non-stick pan over medium heat and lightly grease it with oil.
- 4. Pour a ladleful of dosa batter onto the tawa and spread it into a thick round shape, about 1/3 inch thick.
- 5. Immediately sprinkle the prepared vegetable mixture evenly over the surface of the batter, pressing gently so the vegetables stick.
- 6. Drizzle a few drops of oil around the edges and cook on medium heat for 2-3 minutes or until the bottom turns golden brown.
- 7. Flip the uttapam carefully using a spatula and cook the other side for 1-2 minutes until the vegetables are slightly charred and the uttapam is cooked through.
- 8. Remove from heat and repeat the process with the remaining batter and vegetable mixture.
- 9. Serve hot with coconut chutney or tomato chutney on the side for a complete breakfast.
