Ingredients
- 250g Swad White Aval 250g
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 ml Mustard Oil
- 250 ml Lemon Juice Concentrate
- 250 g Carrot
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- - Green Peas
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the flattened rice (poha) gently under cold water and let it sit in a sieve for 5-10 minutes to soften.
- 2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, letting them splutter, then toss in curry leaves and chopped green chilies.
- 3. Add the chopped onion and sauté until translucent, followed by the grated carrot and green peas. Cook for 3-4 minutes until the vegetables soften.
- 4. Stir in the turmeric powder and salt, ensuring the spices coat the vegetables evenly.
- 5. Add the softened poha to the pan and mix gently. Reduce heat to low and cook for 2-3 minutes, stirring occasionally.
- 6. Turn off the heat and mix in the lemon juice and roasted peanuts for tanginess and crunch.
- 7. Garnish with freshly chopped coriander leaves and serve warm.
