Ingredients
- 500 g Poha
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Green Peas
- 500g Good Life Raw Peanuts 500 G
- 200 ml Mustard Oil
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the poha in a colander under running water for 30 seconds, then let it sit to soften while you prepare other ingredients.
- 2. Heat oil in a pan over medium heat and add mustard seeds. Once they start popping, add curry leaves and green chili, sautéing for 1 minute.
- 3. Add the chopped onion and cook until translucent, about 3-4 minutes. Then, add the grated carrot, green peas, and tomato, cooking for another 4-5 minutes until softened.
- 4. Stir in the turmeric powder and salt, mixing well to coat the vegetables evenly.
- 5. Add the softened poha to the pan and gently mix it with the vegetable mixture, ensuring even distribution. Cook for 2-3 minutes.
- 6. Toss in the peanuts and lemon juice, stirring well. Adjust salt and spices if needed.
- 7. Garnish with freshly chopped coriander leaves and serve warm.
