Ingredients

  • 500 Grms Bajra Atta Millets Atta 500 Grms
  • 200 ml Ghee
  • 500 g Onion
  • 250 g Carrot
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 250 g French Beans
  • - Green Peas
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the foxtail millet thoroughly under running water and soak it in water for 20 minutes, then drain and set aside.
  2. 2. Heat ghee on a flat tawa or pan over medium heat. Add mustard seeds and let them crackle, followed by cumin seeds, green chili, and curry leaves. Sauté for 1-2 minutes.
  3. 3. Add the chopped onion and sauté until translucent, then stir in the chopped tomato and cook until soft and mushy.
  4. 4. Add the chopped green beans, carrots, and green peas. Sauté for 3-4 minutes until the vegetables are slightly tender.
  5. 5. Stir in turmeric powder, red chili powder, and salt. Mix well to coat the vegetables evenly with the spices.
  6. 6. Add the drained millet to the pan and mix thoroughly with the vegetables and spices.
  7. 7. Pour in 2 cups of hot water and stir. Cover the pan and let it cook on low heat for 12-15 minutes until the millet is cooked and fluffy.
  8. 8. Turn off the heat, sprinkle lemon juice and chopped coriander leaves over the upma, and gently mix.
