Ingredients

  • 200 ml Sesame Oil
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • 100 g Salt
  • - Frozen Peas
  • - Grated Coconut
  • 100 g Tamarind Paste
  • 250 ml Olive Oil
  • - Rice Flour
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 100 g Curry Leaves
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Combine rice flour, salt, and hot water in a bowl to form a smooth dough. Add sesame oil and knead lightly. Use an idiyappam press to shape noodles onto idli plates and steam for 8-10 minutes until fully cooked.
  2. 2. Heat cooking oil in a pan and add mustard seeds. Once they splutter, add curry leaves and chopped green chili, sautéing for 1 minute.
  3. 3. Add finely chopped onion and sauté until translucent. Mix in turmeric powder, red chili powder, and coriander powder, cooking for another minute.
  4. 4. Add the chopped tomatoes and cook until soft, stirring occasionally. Stir in tamarind pulp and grated coconut, cooking for 2-3 minutes to blend flavors.
  5. 5. Mix in boiled peas and adjust salt to taste. Cook for another 2 minutes, then remove from heat and sprinkle with chopped coriander leaves.
  6. 6. Serve the steamed idiyappam topped with the prepared masala, ensuring even distribution for every serving.
