- 400 g Atta Bread
- 500 g Onion
- 500 g Tomato - Hybrid
- 200Ml Kara Coconut Milk Classic (200ml)
- 100 g Tamarind Paste
- medium Chilli Green Long
- 200 ml Mustard Oil
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle. Add chopped onion and sauté until translucent.
- 2. Stir in the green chilies and diced mixed vegetables. Cook for 3-4 minutes, stirring occasionally.
- 3. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2 minutes.
- 4. Stir in the chopped tomatoes and cook until they soften. Add tamarind paste and mix thoroughly.
- 5. Pour in the coconut milk and simmer the mixture for 5-7 minutes, stirring occasionally, until the curry thickens slightly.
- 6. Toast the whole wheat bread slices until golden and crisp.
- 7. Spoon the prepared coconut curry onto the toasted bread slices, spreading it evenly.
- 8. Garnish with chopped fresh coriander leaves and serve immediately.
