Ingredients

  • 1 kg Basmati Rice
  • 200 g Paneer
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 100 g Tamarind Paste
  • 200 ml Ghee
  • 100 g Kaju Kani
  • 50 Grms Garam Masala Handmade Spices 50 Grms
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
  2. 2. Heat 1 tablespoon of ghee in a large pan and fry the cashews until golden brown. Remove and set aside.
  3. 3. In the same pan, add the remaining ghee. Once hot, add mustard seeds and let them splutter. Then, add curry leaves, sliced onion, and green chilies, sautéing until the onion turns translucent.
  4. 4. Stir in the chopped vegetables and cook for 2-3 minutes. Add turmeric powder, red chili powder, and garam masala, mixing well with the vegetables.
  5. 5. Add the chopped tomatoes and cook until they soften. Then, add the tamarind pulp and mix well.
  6. 6. Add the soaked and drained basmati rice to the pan, gently mixing to coat the rice with the spices and vegetables.
  7. 7. Pour in enough water to cook the rice (approximately 2 cups), add salt to taste, and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the rice cook until tender and all the water is absorbed (about 12-15 minutes).
  8. 8. Meanwhile, lightly sauté the paneer cubes in a separate pan until golden on the edges. Add them to the cooked pulao and mix gently.
  9. 9. Garnish the pulao with fried cashews and serve hot with a side of yogurt or coconut chutney.
