Ingredients

  • 200 ml Sesame Oil
  • 100 g Curry Leaves
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • - Red Chilli Powder
  • 50g Everest Garam Masala
  • 50 g Cumin Powder
  • 100 g Salt
  • 100 g Coriander Leaves
  • 500 g Capsicum Green
  • medium Chilli Green Long
  • 250 ml Lemon Juice Concentrate
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Cut the idlis into bite-sized cubes and set aside.
  2. 2. Heat oil in a large skillet over medium heat. Add mustard seeds and allow them to splutter, then add curry leaves and chopped green chili. Sauté for 30 seconds.
  3. 3. Add chopped onion to the skillet and cook until translucent, about 3-4 minutes.
  4. 4. Stir in the chopped tomato and cook until soft and mushy, about 5 minutes. Add the turmeric powder, red chili powder, garam masala, cumin powder, and salt. Mix well and cook for 2 minutes to blend the flavors.
  5. 5. Add diced bell peppers and stir-fry for 3-4 minutes, keeping them slightly crunchy.
  6. 6. Gently fold in the idli cubes and toss well to coat them evenly with the masala. Cook for 5 minutes, stirring occasionally to prevent sticking.
