  • 500 g Onion
  • 1 liter Sunflower Oil
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Crack the eggs into a bowl, add a pinch of salt, and whisk until smooth and frothy.
  2. 2. Heat the oil or ghee in a tawa or non-stick pan over medium heat and add cumin seeds, allowing them to sizzle for 30 seconds.
  3. 3. Add the chopped onion and green chili to the pan, sautéing until the onion turns translucent, about 2-3 minutes.
  4. 4. Stir in the chopped tomatoes, turmeric powder, and red chili powder, and cook for 4-5 minutes until the tomatoes soften and the mixture becomes a thick masala base.
  5. 5. Lower the heat and pour the whisked eggs into the pan, gently stirring and scrambling the mixture with the masala until the eggs are just cooked and fluffy, about 2-3 minutes.
  6. 6. Sprinkle garam masala and fresh coriander leaves over the eggs, stir gently, and cook for another minute to blend the flavors.
  7. 7. Remove from heat and serve hot with toasted bread, parathas, or as a filling for wraps.
