Ingredients

  • - Malai Paneer
  • 1 Kg Lokwan Premium Wheat Atta 1 Kg
  • 200 g Dahi
  • 500 g Onion
  • 100 g Coriander Leaves
  • 300 g Ginger Paste
  • 200 ml Mustard Oil
  • - Chaat Masala
  • medium Chilli Green Long
  • - Coriander Powder
  • 50 g Cumin Powder
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to knead into a soft, pliable dough. Cover and let it rest for 20 minutes.
  2. 2. In another bowl, mix crumbled paneer, yogurt, finely chopped onion, green chili, coriander leaves, ginger paste, turmeric powder, red chili powder, garam masala, coriander powder, cumin powder, chaat masala, and a pinch of salt. Ensure the mixture is well-combined.
  3. 3. Divide the dough into small balls and roll each ball into a 4-inch circle. Place a spoonful of the paneer filling in the center, then fold the edges to seal and form a stuffed ball.
  4. 4. Gently roll out the stuffed ball into a 6-inch paratha, being careful not to tear the dough and expose the filling.
  5. 5. Heat a skillet or tawa over medium heat. Place a rolled paratha on the skillet and cook for 1-2 minutes until bubbles appear. Flip and drizzle a few drops of oil around the edges.
  6. 6. Cook the other side for 1-2 minutes, pressing gently with a spatula to ensure even cooking. Flip again and cook until both sides are golden and slightly crisp.
  7. 7. Repeat the process for the remaining dough and filling. Serve the parathas hot with yogurt, pickle, or mint chutney.
