Ingredients
- 1 ltr Minute Maid Pulpy Orange Fruit Drink
- 100 g Curryit Preservative Free Tomato Puree
- 100 g Celery Stalk
- 250 g Organically Grown Green Capsicum
- 100 g Sambar Onion Peeled
- 200 g Pineapple Chunks
- 250 g Freshtohomefresh Baasa /Pangasius - Boneless Fillet
- 1 kg Whole Farm Brown Sugar
- 700Ml Hillers Vinegar
Instructions
- 1. Chop 2 sticks of celery, 1 green pepper, and 1 medium onion into bite-sized pieces.
- 2. In a skillet or pan, combine 3 tablespoons of brown sugar, 1/2 cup of orange juice, 1/2 tablespoon of vinegar, 1 cup of tomato puree, and the chopped vegetables.
- 3. Bring the mixture to a boil over medium heat, stirring occasionally, and cook for about 10 minutes until the vegetables are tender but still crisp.
- 4. Add 2 slices of pineapple (chopped into chunks) and 1 fillet of fish to the pan. Reduce the heat to low and simmer for 5 minutes, ensuring the fish is fully cooked and flakes easily with a fork.
- 5. Serve the sweet and tangy fish hot, garnished with additional pineapple chunks if desired.
