Ingredients

  • 100 g Coriander Leaves
  • 1 kg Potato
  • 100 Ml Gowardhan Ghee
  • 200 g Table Salt
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil
  • - Coriander Powder
  • 500 g Wheat Flour / Maida

Instructions

  1. 1. In a mixing bowl, combine 1 cup whole wheat flour, 1/2 tsp salt, and 1/2 tsp oil. Gradually add water and knead into a soft dough. Cover and rest for 15 minutes.
  2. 2. For the stuffing, grate 1 medium-sized potato and squeeze out excess water. Heat 1 tsp oil in a pan, add 1/2 tsp cumin seeds, and let them splutter.
  3. 3. Add the grated potato, 1/4 tsp turmeric, 1/2 tsp red chili powder, 1/2 tsp coriander powder, and salt to taste. Cook for 5-7 minutes until the potato is soft. Mix in 1 tbsp chopped coriander and set aside.
  4. 4. Divide the dough into 6 equal portions. Roll each portion into a small circle (about 4 inches in diameter).
  5. 5. Place 1-2 tsp of the potato stuffing in the center of each circle. Fold the edges to seal the stuffing inside and gently flatten.
  6. 6. Roll out each stuffed ball into a mini paratha (about 5-6 inches in diameter), ensuring the stuffing does not spill out.
  7. 7. Heat a tawa or skillet on medium flame. Cook each paratha, applying 1/2 tsp ghee or oil on both sides, until golden brown and crisp.
  8. 8. Serve hot with yogurt, pickle, or chutney.
