Ingredients

  • 100 g Coriander Leaves
  • - Chicken Breast
  • 100 g Feta Cheese
  • 1 kg Beef Boneless
  • 100 g Garlic
  • 500 g Onion
  • 200 g Table Salt
  • 50 g Cumin Powder
  • 50g Everest Garam Masala
  • - Coriander Powder
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Gather all ingredients: 6-8 Hatch green chiles, 200g minced chicken, 1 small onion (finely chopped), 2 garlic cloves (minced), 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/4 teaspoon turmeric powder, 1/4 teaspoon red chili powder, 1/2 teaspoon garam masala, 2 tablespoons oil, 50g grated cheese (optional), salt to taste, and fresh coriander leaves (chopped).
  2. 2. Wash the Hatch green chiles thoroughly and pat them dry with a clean kitchen towel.
  3. 3. Carefully make a slit lengthwise on one side of each chile, ensuring not to cut all the way through. Remove the seeds and membranes if you prefer less heat.
  4. 4. Heat 1 tablespoon of oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
  5. 5. Add the minced garlic and sauté for another 30 seconds until aromatic.
  6. 6. Add the minced chicken to the pan and cook until it turns white and is fully cooked, breaking it into small pieces with a spatula.
  7. 7. Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2-3 minutes to let the spices infuse into the chicken.
  8. 8. Turn off the heat and stir in the chopped coriander leaves. Let the filling cool slightly.
  9. 9. Preheat the oven to 180°C (350°F).
  10. 10. Stuff each Hatch green chile generously with the cooked chicken mixture. If using cheese, sprinkle a little on top of the stuffing before closing the chile.
  11. 11. Heat the remaining 1 tablespoon of oil in a pan over medium heat. Lightly sear the stuffed chiles on all sides for 1-2 minutes to enhance flavor.
  12. 12. Place the seared chiles on a baking tray lined with parchment paper or lightly greased.
  13. 13. Bake in the preheated oven for 10-12 minutes, or until the chiles are slightly tender and the filling is heated through.
  14. 14. Remove from the oven and let the chiles cool for 2-3 minutes before serving.
  15. 15. Garnish with additional fresh coriander leaves if desired and serve hot as a snack or side dish.
