- 100 g Coriander Leaves
- - Chicken Breast
- 100 g Feta Cheese
- 1 kg Beef Boneless
- 100 g Garlic
- 500 g Onion
- 200 g Table Salt
- 50 g Cumin Powder
- 50g Everest Garam Masala
- - Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
- 500 Ml Champion Oil
Instructions
- 1. Gather all ingredients: 6-8 Hatch green chiles, 200g minced chicken, 1 small onion (finely chopped), 2 garlic cloves (minced), 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/4 teaspoon turmeric powder, 1/4 teaspoon red chili powder, 1/2 teaspoon garam masala, 2 tablespoons oil, 50g grated cheese (optional), salt to taste, and fresh coriander leaves (chopped).
- 2. Wash the Hatch green chiles thoroughly and pat them dry with a clean kitchen towel.
- 3. Carefully make a slit lengthwise on one side of each chile, ensuring not to cut all the way through. Remove the seeds and membranes if you prefer less heat.
- 4. Heat 1 tablespoon of oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
- 5. Add the minced garlic and sauté for another 30 seconds until aromatic.
- 6. Add the minced chicken to the pan and cook until it turns white and is fully cooked, breaking it into small pieces with a spatula.
- 7. Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2-3 minutes to let the spices infuse into the chicken.
- 8. Turn off the heat and stir in the chopped coriander leaves. Let the filling cool slightly.
- 9. Preheat the oven to 180°C (350°F).
- 10. Stuff each Hatch green chile generously with the cooked chicken mixture. If using cheese, sprinkle a little on top of the stuffing before closing the chile.
- 11. Heat the remaining 1 tablespoon of oil in a pan over medium heat. Lightly sear the stuffed chiles on all sides for 1-2 minutes to enhance flavor.
- 12. Place the seared chiles on a baking tray lined with parchment paper or lightly greased.
- 13. Bake in the preheated oven for 10-12 minutes, or until the chiles are slightly tender and the filling is heated through.
- 14. Remove from the oven and let the chiles cool for 2-3 minutes before serving.
- 15. Garnish with additional fresh coriander leaves if desired and serve hot as a snack or side dish.
