Ingredients

  • 500 g Onion
  • - Besan
  • 1 kg Bitter Gourd
  • 200 ml Sesame Oil
  • 100 g Garlic
  • loose Ginger
  • 200 g Table Salt
  • 100 g Amchur Powder
  • - Coriander Powder
  • 100 g Yellow Mustard Seeds
  • 20 g Turmeric Powder
  • 10G Red Chili Powder

Instructions

  1. 1. Wash and peel the bitter gourds, then cut each into 2-3 inch pieces. Scoop out the seeds to create a hollow center for stuffing.
  2. 2. In a mixing bowl, add chickpea flour, coriander powder, a pinch of turmeric powder, a small piece of jaggery (finely grated), and a pinch of amchur powder. Mix well to create a dry stuffing mixture.
  3. 3. Stuff each bitter gourd with the dry mixture, pressing it well inside.
  4. 4. Heat sunflower oil in a pan. Add mustard seeds and let them crackle.
  5. 5. Add finely chopped red onion and sauté until they turn translucent.
  6. 6. Carefully place the stuffed bitter gourds in the pan and sprinkle a pinch of top-op table salt over them.
  7. 7. Cover and cook on a low flame, turning occasionally, until the bitter gourds are tender and the outer skin is golden brown and crispy.
