Love Letter Puff Pastry is a delightful fusion dessert inspired by the flavors of India and the crisp, flaky layers of European puff pastry. These sweet, golden pastries are filled with a luscious spiced coconut-jaggery filling and shaped like love letters, making them perfect for sharing with family during special occasions or festive celebrations.
Ingredients
- 320 g Puff Pastry Sheet
- - Grated Coconut
- 100G California Almond (100g)
- 200g Strawberry
- 500 g Jaggery Powder
- 100 g Salt
- 200 ml Ghee
- 100 g Icing Sugar
- 20 g Cardamom Powder
Instructions
- 1. In a medium pan, heat ghee over medium heat. Add grated coconut and sauté for 2-3 minutes until fragrant and lightly toasted.
- 2. Add jaggery, cardamom powder, and a pinch of salt to the pan. Stir until the jaggery melts and combines with the coconut to form a thick, sticky mixture. Cook for another 2-3 minutes. Remove from heat and let it cool completely.
- 3. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
- 4. On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the sheet into 8 equal rectangles.
- 5. Place a tablespoon of the cooled coconut-jaggery filling in the center of each rectangle. Fold the pastry over the filling to create a rectangular 'letter' shape, sealing the edges by pressing them down lightly with a fork.
- 6. Brush the top of each pastry 'letter' with milk or cream for a golden finish. Optionally, sprinkle with a few slivered almonds for added crunch.
- 7. Arrange the pastries on the prepared baking tray, leaving some space between each. Bake in the preheated oven for 20 minutes or until the pastries are golden and puffed.
- 8. Remove the pastries from the oven and let them cool slightly. Serve warm or at room temperature, garnished with powdered sugar if desired.
