Spinach and Sweet Potato Curry recipe

Ingredients

  • 100 g Sambar Onion Peeled
  • 100 g Garlic - Single Clove
  • 500 g Organically Grown Tomato (Hybrid) (Tamatar)
  • 500 g Organically Grown Sweet Potato
  • 400 g Zehrat Safa Tomato Paste, 4
  • 250 g Spinach - Chopped
  • 1 pack (100 g) On1Y Whole Cumin Seeds, Sabut Jeera Spices
  • 100 g Jk Jeera Powder / Cumin Powder
  • 500 g Dhani Pure Coriander Powder
  • 1 pack (500 g) Daily Good Turmeric - Haldi Powder
  • 750 ml Catch Clear Lemon N Lime Flavoured Water
  • 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
  • 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
  • 1 ltr Black & Green Extra Virgin Cold Pressed Avocado Oil
  • 100 g X 3 Mtr Coriander Powder Combo
  • 20 g Turmeric Powder

Instructions

  1. 1. Heat 3 tablespoons of oil in a pot over medium-high heat.
  2. 2. Add 1 chopped onion and fry until it releases its water and begins to shrivel, about 5 minutes.
  3. 3. Stir in 2 minced garlic cloves, 1 teaspoon cumin seeds, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon turmeric powder, and 1 teaspoon chili powder. Cook for 2-3 minutes, adding 1/4 cup water to prevent sticking.
  4. 4. Add 1 chopped tomato and cook until softened, about 5 minutes.
  5. 5. Add 1 diced sweet potato, along with another 1/4 cup water. Stir well, cover, and cook on medium heat for 15 minutes, stirring occasionally.
  6. 6. Add 2 tablespoons tomato paste, 200 g fresh spinach, and salt and pepper to taste. Stir until the spinach is evenly coated.
  7. 7. Add the remaining 1/2 cup water, cover, and cook for another 5 minutes until the spinach wilts and releases its water.
  8. 8. Turn up the heat to high and cook until the liquid reduces to your desired consistency, stirring frequently.
  9. 9. Serve hot as a main dish.
