Ingredients

  • 25 g Parsley
  • 500 g Dairy Craft Unsalted White Butter
  • 200 g Dairy Craft Cremella Natural Cream Cheese
  • 250 g D'Lecta Feta Cheese Block - Rich In Protein
  • 450 g Switz Filo Pastry Sheets
  • 200 g Organigram Chia Seeds
  • 250 g Spinach - Chopped
  • 80 g Urban Platter Cayenne Pepper Powder

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Melt 1 1/2 cups of butter in a small saucepan over low heat. Keep warm.
  3. 3. In a large mixing bowl, combine 1 cup of cream cheese, 1/4 lb of crumbled feta cheese, 1/2 lb of shredded gruyere cheese, 1/4 cup of chia seeds (prepared with 3/4 cup of water), 2 tablespoons of chopped parsley, and 1/8 teaspoon of cayenne pepper. Mix until smooth and well combined.
  4. 4. Add 1 cup of chopped spinach and 3/4 cup of toasted pine nuts to the cheese mixture. Stir until evenly distributed.
  5. 5. Open the filo dough package and cover the sheets with a damp, well-wrung-out towel to prevent them from drying out.
  6. 6. Using a 2-inch wide pastry brush, butter a 9 x 13 x 2-inch baking dish. Then, brush one sheet of filo dough with melted butter and place it in the dish. Repeat with 8-10 sheets, layering them one on top of the other.
  7. 7. Spread the spinach and cheese filling evenly over the layered filo sheets.
  8. 8. Butter 8-10 more filo sheets, layering them one at a time over the filling.
  9. 9. Using a sharp knife, cut the unbaked borek into serving-sized pieces. If the dough is too soft to cut, refrigerate the pan for 1 hour to firm it up.
  10. 10. Place the baking dish in the preheated oven and bake for 30-40 minutes, or until the top is golden brown and crisp.
