- 250 g Carrot
- 250 g French Beans
- 500 g Tomato - Hybrid
- 250 ml Olive Oil
- 500 g Capsicum Green
- 100 g Coriander Leaves
- - Coriander Powder
- 50G Green Chilies
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 2 tablespoons of cooking oil on a tawa or a large skillet over medium heat. Add cumin seeds and mustard seeds, and let them splutter for about 30 seconds.
- 2. Add the chopped green chilies and sauté for a minute, followed by the turmeric powder, red chili powder, and coriander powder. Stir well to combine the spices.
- 3. Add the julienned carrot, chopped green beans, and sliced bell pepper to the tawa. Cook for 3-4 minutes, stirring occasionally, until the vegetables begin to soften but retain some crunch.
- 4. Mix in the chopped tomato and sprouts. Sprinkle with salt to taste, and sauté everything together for another 4-5 minutes until the sprouts are cooked but still firm.
- 5. Turn off the heat and drizzle the stir fry with lemon juice. Garnish with freshly chopped coriander leaves.
