  • 500 g Capsicum Green
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50G Green Chilies
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat 2 tablespoons of cooking oil on a tawa or a large skillet over medium heat. Add cumin seeds and mustard seeds, and let them splutter for about 30 seconds.
  2. 2. Add the chopped green chilies and sauté for a minute, followed by the turmeric powder, red chili powder, and coriander powder. Stir well to combine the spices.
  3. 3. Add the julienned carrot, chopped green beans, and sliced bell pepper to the tawa. Cook for 3-4 minutes, stirring occasionally, until the vegetables begin to soften but retain some crunch.
  4. 4. Mix in the chopped tomato and sprouts. Sprinkle with salt to taste, and sauté everything together for another 4-5 minutes until the sprouts are cooked but still firm.
  5. 5. Turn off the heat and drizzle the stir fry with lemon juice. Garnish with freshly chopped coriander leaves.
  6. 6. Serve hot directly from the tawa for the best flavor. Pair with whole-grain bread or enjoy as is for a healthy, filling breakfast.
