Ingredients

  • 200 g Paneer
  • 1 Kg Idly/Dosa Batter
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 500 g Capsicum Green
  • 50 g Asafoetida Powder
  • 200 ml Mustard Oil
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 50G Green Chilies
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. In a mixing bowl, combine paneer cubes with turmeric, red chili powder, coriander powder, garam masala, and a pinch of salt. Mix well and let it marinate for 10 minutes.
  2. 2. Heat 1 tablespoon of oil in a tawa or flat pan over medium heat. Add the marinated paneer and sauté for 3-4 minutes until lightly golden. Remove and set aside.
  3. 3. In the same pan, add another tablespoon of oil. Sauté chopped onion, tomato, capsicum, green chilies, and asafoetida for 2-3 minutes until slightly softened.
  4. 4. Heat a separate non-stick tawa or griddle on medium heat. Pour a ladleful of dosa batter and spread it into a small, thick circle to form the uttapam base.
  5. 5. Sprinkle the sautéed vegetables evenly over the batter and gently press them down. Drizzle a few drops of oil around the uttapam and cook for 2-3 minutes until the bottom is golden and crisp.
  6. 6. Flip the uttapam carefully and cook the other side for another 2 minutes until cooked through. Repeat with the remaining batter.
  7. 7. To serve, place the uttapams on a plate and top them with the sautéed paneer. Garnish with fresh coriander leaves.
