Ingredients

  • 1 kg Basmati Rice
  • 1 kg Yellow Moong Dal
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • - Green Peas
  • 200 ml Ghee
  • 100 g Coriander Leaves
  • 50 g Asafoetida Powder
  • 250 g Carrot
  • medium Chilli Green Long
  • 50g Everest Garam Masala
  • 250 g French Beans
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice and yellow moong dal thoroughly and soak them for 20 minutes. Drain and set aside.
  2. 2. Heat ghee in a tawa or deep pan over medium heat. Add cumin seeds and let them splutter, then add asafoetida.
  3. 3. Add the chopped onion and green chilies, and sauté until the onion becomes golden brown. Stir in the chopped tomatoes and cook until soft and mushy.
  4. 4. Mix in the turmeric powder, red chili powder, and garam masala, and sauté for a minute to release the spices' aroma.
  5. 5. Add the carrots, beans, and green peas, and stir well. Cook for 2-3 minutes until the vegetables slightly soften.
  6. 6. Add the soaked rice and dal, and mix everything to coat the grains with the spices and vegetables.
  7. 7. Pour in enough water (approximately 3 cups) and add salt to taste. Stir well, cover, and let it cook on low heat for 20-25 minutes, stirring occasionally.
  8. 8. Once the rice and lentils are fully cooked and the mixture reaches a khichdi-like consistency, turn off the heat.
  9. 9. Garnish with freshly chopped coriander leaves and serve hot with yogurt or pickle on the side for a complete breakfast.
