Ingredients

  • - Basil Leaves
  • 500 g Chicken Whole
  • 500Ml Gaia Extra Virgin Olive Oil (500ml)
  • 60G Primi Piatti Red Chilli Flakes
  • 20 g Oregano
  • 500 g Tomato - Hybrid
  • 100 g Garlic
  • 100 g Unsalted Butter
  • 52 g Paprika Powder
  • 50 g Black Pepper Powder
  • 100 g Salt
  • 500Ml De Nigris Balsamic Vinegar

Instructions

  1. 1. In a bowl, combine olive oil, red chili flakes, oregano, basil, paprika, black pepper, and salt to create a marinade. Coat the chicken thighs thoroughly in the marinade and let them rest for 30 minutes to an hour.
  2. 2. Heat a grill pan over medium heat and grill the marinated chicken thighs for 5-6 minutes on each side, or until fully cooked and slightly charred. Remove and let rest for 5 minutes before slicing.
  3. 3. In a separate bowl, mix the diced tomatoes, fresh basil, balsamic vinegar, and a pinch of salt. Toss well to make a fresh tomato-basil salad.
  4. 4. Toast the crusty bread slices on a pan until golden brown. While warm, rub each slice with the cut side of the halved garlic clove, then spread a thin layer of butter on top.
  5. 5. Arrange the grilled chicken slices on a platter alongside the tomato-basil salad and the garlic bread. Serve immediately for a delightful and satisfying dinner.
